A sudden rush of work (unpaid, but absorbing) has sliced into my shopping, cooking and eating time this week. I've been reduced to coming downstairs from the computer at least an hour later than usual, peering hopefully into the fridge and pantry, and seeing what I can concoct from the remains of the day, the day before, and several days before that. The best thing I ate this week was made entirely from what Harvey and I used to call nourishing scraps - we once read an ironic account of a grande dame kindly going round the cottages on her estate with "a basket of nourishing scraps". It was a really good Caesar salad.
For what was meant to be our last Christmas together, Harvey had bought me a book called What Caesar Did For My Salad, by Albert Jack. Of course I didn't get to unwrap it or read it until after he'd died. It's a lively account of how various foods and food terms came about. Of Caesar Salad, Jack writes:
"The name, of course, conjures up a grumpy, toga-clad emperor tucking into a spot of lunch before perhaps throwing a Christian or two to the lions, in the name of entertainment, to keep the people of Rome happy." (I once heard the classics professor at Victoria University explaining that keeping the people of Rome happy "was a vital task for emperors, because for the first time in history, the empire was producing enough food to keep everyone in Rome fed - but it couldn't produce enough work to keep them occupied. So "bread and circuses" was a recipe for avoiding revolution.)
In fact, Caesar salad "is less than a hundred years old and comes from the most unlikely of places, Mexico." It's named after Caesar Cardini, who came to America during Prohibition. He and his brother moved just across the border to Tijuana and set up a restaurant serving "strong alcohol and tasty Italian food". So many people came for the 4th of July that he ran out of food, and threw together a salad from "whatever he happened to have left in the kitchen". It wasn't so very far from what the Roman's actually ate. Our word "salad" comes from "salata herba", salted herbs - "which shows that both Julius Caesar and Caesar Cardini had a similar taste in strongly flavoured dressings."
After the Cardinis moved back to Hollywood, the salad became a favourite of the stars. And I'm happy to admit that I don't even try to make my own Caesar salad dressing - I use the one made by that stunningly handsome Holllywood star, Paul Newman, who managed to stay married to Joanne Woodward for a lifetime, and was always a strong supporter of liberal causes. Recently I read Harry Belafonte's autobiography, My Song (as an ebook, natch), and he says Newman was one of the most generous supporters of the civil rights movement. And all the profits from his excellent dressings go to charity. What's not to like?
My Caesar salad
The last leaves of Cos lettuce from the winter-planted box in the garden
The end of a cucumber, peeled and chunked (not trad, but I had it, so why not?)
The last of a smoked chicken breast, sliced not too thinly (I don't usually have chicken in my Caesar, but it was there, and it was good)
A few scraps of bacon from the one remaining rasher, fried and cut into pieces
The last four anchovies from an open tin in the fridge
Croutons made from a nicely dry stale wodge of white loaf, cut into neat cubes and fried in olive oil till golden brown and crunchy
An egg
Tear up the leaves and spread over a good-sized, shallow-sided dish.
Scatter over the chicken, cucumber, bacon, anchovy, and chicken.
Dress by tossing gently with Paul Newman's Caesar Salad dressing - not too much, it's strong.
Poach the egg (I do this in the microwave - break the egg into a large cup with a tablespoon of water in it, pierce the yolk with a knife (or else it will explode), cook for 30 seconds on medium high, leave for a bit (usually while I butter the toast), cook for another 20 or 30 seconds on medium high (depending on your microwave), and carefully remove the egg from the water. I have the perfect method - sliding it gently onto a round, pierced soup skimmer to drain).
Scatter the croutons over the salad. (Some people like to put them in earlier so they get some dressing on them, but I like to keep them crunchy.)
Place the poached egg on top. Add ground black pepper, break the yolk, stir it around a bit, and eat.
Fit for an empress.

Look Mum, no waste
Tonight, on TV7 (screening for the very last time thanks to the idiots in charge of TVNZ and its funding), I saw a documentary about the incredible amount of food wasted in the USA. And I have to admit I felt reprehensibly smug, because I'd just had a delicious dinner made almost entirely of leftovers.
I don't quite know where I acquired my horror at wasting food. Certainly we didn't waste much at home, but I think it also came from being married so young and trynig to produce good food as cheaply as possible - which meant not throwing anything away.
For a midwinter feast last weekend, we had a roast of pork (I'll write about that later). Although it wasn't enormous - about 2.7 kg, including a small bone - there was a lot of meat on it. Five of us ate our fill to start with, then I had a cold meat dinner, and the next night I and a friend ate slices heated up in the gravy (which was particularly good, because I made it with pork stock from the French pork and potatoes dish). Then I had to go away unexpectedly (more about this tomorrow on Elsewoman), so I cut up the rest of the meat and froze it.
I got back today, and thought about what to have for dinner. It's been the coldest day of winter so far, barely getting to 9C at best, so the last thing I wanted to do was go shopping. I got out half the frozen pork slices and left them out to thaw (didn't take long, as they'd been so recently frozen). Then I put the oven on to 160C (fan forced), poked holes in a Red Jacket potato, coated it lightly with oil, and put it straight onto the oven rack about an hour and a half before I wanted to eat it. I had leftover rhubarb, too, so I made a little crumble topping and sat that in the oven, near the bottom, while the potato cooked.
The pork, some leftover bread, and some onion got ground up separately in the food processor, along with some garden herbs - parsley, sage, thyme - that I dashed out into the cold for. I used all this, plus two eggs, a bit of flour, a dash of chili sauce and plenty of salt and pepper, to make rissoles. I had some leftover red cabbage and apple, cooked with apple juice, apple syrup and balsamic vinegar, so when everything else was ready, that got heated up in the microwave.
The rissoles were terrific (and I've got more for later), the potato was perfect and the sweet-sour cabbage was great with it all. I had just enough cream left to go with the crumble (half of that left for later too).
I know the prospect of leftovers can sometimes feel dreary, but honestly, it was one of the nicest little dinners I've made myself this year.

Real-life rissoles
I grew up with rissoles - usually on Mondays. They're one of those things that I never actually asked my mother how to make. But when I came to make them myself, I realised I must have been watching, because I did know roughly what to do. But I've just been looking up rissole recipes on-line, and I'm shocked. In my view none of them are authentic, because they use fresh mince. That's not what rissoles are made of! The real-life rissole is always made of leftover roast meat (which is why we had them on Mondays, after Sunday's lunchtime roast and teatime cold meat). When I was growing up they were usually made of hogget or beef - pork was for special occasions only, and it all got eaten before there could be any question of rissoles.
Harvey loves any kind of rissoles, and after we've had a roast he always asks hopefully if there's enough meat left over for them. He never wants any potato or bread with them - he argues that there's already enough carbohydrate inside. If he eats three, I know I've got them just right.
I used to put the meat through a mincer, but then we acquired a food processor. The first time I used it to make rissoles, it was a disaster. I put everything in at once, and the result was a kind of brownish paste. You could make patties with it, but the texture had nothing to do with the authentic rissole, which should just hold together and be a bit crumbly when you cut into it. Since then I've learnt to grind up the various ingredients in separate batches before mixing them rogether. There's no exact recipe, because it all depends on the amount of cold meat available. You mince the chunks or slices of meat in the processor first, see how much you've got, put it in a big bowl and add the other things to it.
First you need something to bulk it out a bit. You can use leftover mashed potato, or fresh breadcrumbs (which can be made in the processor after you remove the meat), or either or both of these with a little flour. The crucial thing is not to overwhelm the meat with the padding, or the rissoles will be too stodgy and dull.
Mix meat and padding together well, with plenty of salt and pepper. Then use the pulse button to mince a small onion, garlic if you like it, and some herbs - parsley, thyme, oreganum - together in the processor, and add them to the mixture.
Break in an egg (or two, if you have a lot of meat etc) and mix thoroughly. The mixture should not be too wet or too dry - it should just hold together enough for you to shape it into balls, using damp hands. If one egg leaves it just a bit too dry, you can use a bit of stock, wine or water, but be careful not to make it too wet. Flatten each ball and coat it lightly with flour on each side, or fine dry breadcrumbs if you prefer (but flour is traditional!).
Set the oven to low - about 100C - and put an oven tray in to warm, with a folded piece of kitchen paper on it to absorb any excess oil. Heat a frypan with a small amount of oil. (My mother, of course, always used lard or dripping, but we wouldn't do that now, would we. It tasted good, though.) When it's hot (but not smoking), cook the rissoles over medium heat in batches, not too many at a time - I get five into a large non-stick pan. They should be brown and a little crispy on each side. As each batch cooks, put them on the tray in the oven to keep warm.
We eat them with a salad, and I like some kind of chutney or chili sauce too (at home it was always bought tomato sauce) and some fresh bread and butter. Harvey is a purist - he just wants plain rissoles, followed by a bit of salad because it's good for him. If there are any left over, they're good cold for lunch next day.
