Hamming it up

Nine of us for early dinner this year, and a new approach (for me): a move away from Harvey's beloved roast dinner, and I didn't make a Christmas pudding.  Instead we had a half-ham from Cameron Harrison in Kelburn (their ham won best in New Zealand this year).
         My smartest move was at the butcher's the day before - they weren't busy when I got there, so I asked them to skin and score it for me. What would have taken me half an hour and lots of swearing took them two minutes.  I took lots of advice about glazing and warming the ham (it's already cooked, of course), and settled for a simple but delicious glaze of quince jelly (made by friends) with a dash of Dijon mustard. Not very good photos though - blame it on the champagne...




With it there were boiled Jersey Benne potatoes, roast kumara with chili dressing, and a trio of vegetable salads, which were partly trad and partly invented: a green one, a ruby one, and a red, orange and yellow one.

The green one had to be made mostly on the day: ribboned courgettes and spring onions (from the Hill St market) with chunks of avocado, lightly cooked skinny asparagus, finely chopped mint, and a sharp lemon and avocado oil dressing. The courgettes and mint went into the dressing a couple of hours before serving, and the rest was added just before we sat down.  The pretty lettuce serving as a frilly surround is my Drunken Woman Fringed Head.


For the ruby one, inspired by my neighbour, I roasted very small whole tinned beetroot, drained and cut in half if they were a bit bigger, with lemon zest, finely chopped garlic, brown sugar and balsamic vinegar, first wrapping them in foil lined with baking paper, and cooking for 30-40 minutes at 180C. (Of course you could make this with fresh beetroot, but it would take much longer and it's hard to get very small ones.  Roasting the tinned ones this way changes their flavour.)
         On the day, I combined finely chopped red onion (soaked briefly in salted warm water to make it milder) with finely sliced radishes. I added the beetroot just before serving, with a dressing made of good olive oil and a superb blackcurrant and balsamic reduction, sent for Christmas by my sister. Then I mixed in pomegranate seeds - such beautiful, ancient things, and I hadn't used them since I lived in Albania. I topped it off with a scattering of borage flowers offered by two of my guests.



The last salad was based on the recipe for "Insalata di peperoni arrostiti" in Antonio Carluccio's Invitation to Italian Cooking. He says it "improves with standing, and is excellent eaten the next day", so I could make it on the 24th.

4 fleshy yellow and red peppers (I added an orange one too, and slightly increased the dressing quantities)

Halve or third the peppers, removing the seeds and white inside bits,  and grill them skin side up, spread out on a grill pan, or skin side down on a barbecue if you're having one, until the skins go wrinkly and blacken in places.  (You can also blister them individually over a gas flame, but this mass cooking is much faster - only they do need careful checking to make sure they aren't getting too charred, and you'll need to move them around a bit to get even coverage.)

Put the peppers into a plaastic bag or bags, twist the neck, and leave till cool. Then peel or scrape off the skins with a sharp knife. Slice the peppers into thin strips (no more than 1cm wide).

2 cloves garlic, coarsely chopped
3 Tbs good virgin olive oil
1 Tbs parsley, coarsely chopped
salt

Place the pepper strips in a serving dish and toss with the garlic. Dress with the oil, parsley and salt.
Leave until needed (preferably overnight). Check seasoning before serving.


I wanted to get tomatoes in somewhere, so I added halved baby oval tomatoes at the last minute.
Two of these salads, and the kumara, were slightly sweet or sweet/sour, and the green one had lovely fresh flavours. They were all very good with the ham.
         The other four courses - starters, cheese, dessert, afters - were supplied by my guests. The black forest trifle had to have its photo taken before the spoons went in.

Parsnips instead of pudding


Yes, I know I promised a new pudding this week. I did make Alexa Johnston's Bavarian Coffee Cream, otherwise known as Bavarois au Café, but this is how it turned out. It tasted good, but I just didn't make it well enough, so I'll have another go later. I think I need some metal moulds...
        But that wasn't the only new recipe I made last Saturday. I got completely carried away and made a new soup and a new vege dish as well. The soup was great but I'll write it up later when I get a good photo - I've got some in the freezer. The veges were marinated and grilled parsnips, yams and peppers. They were meant to be grilled and served as kebabs, but as I was having them with beef that didn't seem necessary - it was much simpler to do them in a grill pan. They looked lovely and their slightly sticky sweetness was good with the tender beef.

Grilled parsnips, yams and peppers
(adapted from Brian Glover, Homes and Gardens Cookbook 1996)

3 large parsnips
4 medium pink or yellow yams
2 medium red or orange peppers
1 tablespoon sesame seeds

For the marinade
2 Tbsp clear honey
4 Tbsp light soy sauce
4 Tbsp light sesame oil
finely grated zest and juice of 1 large orange
1 tsp ground coriander
2.5 cm fresh ginger, peeled and grated

*  Peel and trim the parsnips and cut them into longish evenly sized pieces roughly the same length as the yams, cutting down through the centre of the thickest end.  Trim the yam ends if necessary. Bring a pot of water to the boil, salt it, and add the parsnips and yams. Boil until almost tender. Drain and cool.
* De-seed the peppers and cut into even pieces - about 6 pieces per large pepper.
Place all the veges in a shallow dish.
* Mix the marinade ingredients in a bowl and pour over the veges. Marinade for at least an hour, turning the veges every so often. (I did them in the morning for the evening.)


* Turn the grill to high. Use a slotted spoon to lift the veges out of the marinade and spread the pieces evenly in the grill pan. Grill for 15 minutes, turning every 5 minutes and spooning over more of the marinade left in the dish. When cooked, sprinkle with the sesame seeds and put back under the grill for a couple of minutes.


Though we had these with beef, they'd be brilliant with chicken or pork too. They were the first things I cooked in my new oven. The old oven proved, when Julio was here and trying to use it for his baking, that it just wasn't up to the job - well, what else could I expect from a cheap, no-frills teenage Italian? There was a good special on a Fisher and Paykel one that would fit the old space, so I gritted my teeth and went for it.
            The good news is that it does seem to cook very well indeed, and of course that's the most important thing. But the controls are another story. They seem to have been designed by someone who has never attempted to use them for cooking in a real-life kitchen. The knobs are so thick (the photo doesn't really show this properly) that they make the already very small numbers and symbols even more difficult to read, and the tiny notch on them that has to be aligned with correct function or temperature is almost invisible (everything shows up better in the photo than in real life, because of the flash). They're also very low - probably designed for wall placement rather than under the bench, though that's where many of these ovens will go. So I have to bend right down to set them correctly, because otherwise I can't see the markings around them. And surely it would be much safer to have assymetrical knobs that showed at a glance if they were off or on? In my next life, I want to be a kitchen appliance designer...

Red and green ratatouille

The third day of absolutely freezing cold wet windy Wellington weather. Fortunately there's enough food in the house not to have to brave the supermarket. I keep putting off just dashing into the garden for a handful of herbs. Time for something warm and comforting, but I don't feel like making another casserole, and we need to eat more veges. Ratatouille works very well.
           It's a bit late in the year to be making it, but thanks to the fine autumn, last week there were still plenty of red peppers/capsicums, aubergine/eggplant and courgettes/zucchini around. (Interesting how all these relatively recent additions to our vege supply have at least two and often three or more names - French, Italian, English, sometimes American.) I use tinned tomatoes - even in high summer, unless you live somewhere warm and grow your own, we just don't get sufficiently ripe, red, luscious tomatoes. But it works best with plain crushed tomatoes, not flavoured ones.
           I can and still sometimes do make the proper version, using lots and lots of olive oil. But I've also evolved a lighter one that fulfils what Julia Child says is the cardinal principle for this dish: cooking each vegetable separately first, then combining them briefly, to keep the true flavours. The one I made left out the eggplant. Harvey doesn't like it, and while I do, I prefer it cooked by itself in something like eggplant parmigiano. Besides, the colour does look very pretty without it.
           You can make any quantity you like - all that matters is keeping a roughly even balance of veges. For my birthday, two very large brown onions, three large red peppers, three tins of tomatoes and about ten small courgettes, plus garlic and oil, made more than enough to feed 14 people as a side dish. The big white Spanish onions are by far the best to use, but even Moore Wilson doesn't seem to have them any more. If anyone knows how I can get them in Wellington, please let me know.

Revised Ratatouille
Large brown onions - or red ones if you prefer, but peel off the tough outer skins
Extra virgin olive oil
Well-ripened sweet peppers - I like red but you can use orange, yellow, or all three
Small/medium courgettes
New Zealand garlic
Extra virgin olive oil - not Spanish
Black pepper and salt
Sugar (optional)
Flat-leafed parsley

Cut the ends off the courgettes and slice them lengthwise in long even strips, 4-6 strips per courgette (depending how thick they are). Put them in a large bowl, sprinkle them with salt and set aside while you prepare and cook the other veges. (If you want to include eggplant, treat it the same way.) Remove the tops, white bits and seeds from the peppers and slice them in long even strips no more than a centimetre wide. Finely chop the garlic - 2 or more cloves.

Hold a mouthful of water in your mouth while you deal with the onions (I got this tip out of a recipe in the paper one day, and it seems to cut down or even eliminate the tears). Peel, slice off the bottom and the top, and take a downward slice off each side (save these solid bits for soup or something). Slice thinly down through the onion from top to bottom, not across it - the slices will cook better. (I push mine down, side-first, through the slicer blade on the processor.)

Put the onions and garlic and a good gloop of oil (depending on how much onion you have) into a wide shallow ceramic or glass dish and cover for the microwave (I use a rubber and plastic lid, it saves having to use plastic clingwrap). Cook for a few minutes until just tender (I use the "fresh veges" setting). Remove to another bowl and set aside.

Use the same dish to cook the peppers until they're softened but not limp, with another gloop of oil, and set aside. Drain and rinse the courgettes, and cook the same way - no need to add more oil to them, the drops of rinsing water are enough. Be careful to just cook them, they shouldn't be completely limp. You can make it all in advance to this point.

Gently heat a large wide frypan - non-stick is good - with another tablespoon of oil, and put in each vege in alternate layers, sprinkling a little chopped parsley over each layer. Add enough tinned, crushed tomatoes to provide moisture and a good balance of flavours. Heat gently through, and add freshly ground black pepper and salt to taste. A very small teaspoon of sugar can be a good addition at this point (especially if the peppers were not deeply coloured and ripe).


This is good by itself with crusty bread, or to go with roast chicken, beef or lamb. It can be served either hot, warm or cold. You can add pieces of fresh lean chicken to any leftovers to make a quick chicken stew, or use it as a pasta sauce.
